The consistency of honey depends on the water content and to some extent on the ambient temperature. By consistency, honey happens:
- Liquid. It may have a different density (viscosity). Density depends on the weather during which nectar is collected. The higher the humidity, the thinner the honey.
- Candied. This is crystallized honey. It can be fine-grained, coarse-grained and cream (fat-like). In the latter embodiment, the crystals are so small that the honey mass seems homogeneous.
By color
The coloring of the honey substance is associated with the properties of honey plants. By color, all honey is divided into:
- Light honey. These include acacia, linden, melilot, and many other varieties. Light honey can have white color, yellow and amber shades. It is believed that in light varieties there are more vitamins and minerals.
- Dark honey. These include buckwheat, chestnut, heather, mountain ash and other varieties. They are thicker than light varieties, more saturated, have spicy bitterness.
There are many varieties of honey, and each of them is an invaluable product presented to us by nature and beekeepers. Due to the variety of varieties, everyone can choose for themselves the option that is more relevant than others for a particular organism, condition, age or disease.
